One Pot Meal: This is a hearty recipe that is perfect on these cool fall and winter days, and with the added dumplings there is no need for a bun making it a perfect all in one, one pot meal.

Simple Ingredients: Because of its simple ingredients it can be tossed together easily with little preparation and can be made from start to finish in under 2 hours with the pressure cooker.

Family Favourite: This is one recipe that I lean on in busy season of life because it is a family pleaser. The kids will not be complaining when this is dished up. They especially love the dumplings… I have been known to double the dumplings on occasion and no one is sad about that

  • Chicken Breast
  • Cream Soup
  • Summer Savoury
  • Frozen Peas
  • Frozen Corn
  • Flour
  • Sugar
  • Salt
  • Butter
  • Baking Powder

Using Your Instant Pot or Slow Cooker

This recipe is extremely versatile, allowing you to prep it in the morning and come back in the evening with a slow cooker or toss everything together in the afternoon with the Instant Pot.

It is important to remember that when you are using the slow cooker, not to put in the peas and corn until the very end, and to allow them to thaw fully before adding them. If you don’t, the peas and corn will become mushy and unappealing. The same goes with the Instant Pot, because cooking them under pressure will just disintegrate them.

When cooking with the slow cooker you also want the frozen items thawed as it will take longer to bring the soup back to a boil if they are just added frozen, extending the amount of time it takes to cook the dumplings.

Like most soups and stews this recipe can be adapted to the stove as well. Just allow the chicken to simmer covered in the brother until it falls apart, or can be shredded with a fork, the remaining steps are the same.

Chicken and Dumplings

Cook Time 1 hour 50 minutes
Total Time 2 hours 5 minutes

Ingredients

  • 2 Tbsp butter
  • 1 onion diced
  • 3 ribs celery
  • 2 carrots
  • 2-3 chicken breasts
  • 2 cups chicken broth
  • 1 can cream soup (mushroom, celery or chicken) plus 1 can water
  • 1 Tbsp summer savoury
  • 1 cup frozen peas thawed
  • 1 cup frozen corn thawed
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon white sugar
  • ½ teaspoon salt
  • 1 tablespoon butter or margarine
  • ½ cup stew broth

Instructions

  1. Set Instant pot to Saute mode
  2. Add butter, onion, celery and carrots to the Instant Pot and fry until onions are translucent.
  3. Add broth, water, soup, chicken and summer savoury, change mode to meat and cook for 1h 20 min. Allow a natural release.
  4. Remove chicken along with 1/2 cup of broth for the dumplings. Shred chicken and return to the Instant pot.
  5. Add corn and peas and return to a simmer.
  6. Combine all dumpling ingredients with a fork
  7. Scoop 1 tablespoon size balls of dough and allow them to simmer in the soup for 15 minutes.
