Muffins are delicious portable snacks that are a family favourite, but sometimes I just don’t want to clean out the muffin tin, OR I want to pack them in the cooler and not end up with half of the crushed and crumbled. I stumbled on the idea of making muffins into bars when I was looking for portable snacks that would stay in tact on busy sports days during summer vacation. It was the need to have portable snacks that are still edible hours after being packed that inspired this recipe.

Why you will love Blueberry Muffin Bars
Yes, muffins are a quick, easy and portable snack BUT sometimes kids need the same thing presented a little differently in order to enjoy them again… and sometimes I don’t want to scrub each little muffin tin. These bars give you the same easy convenience of muffins with less cleanup, and everyone will love them.
Ingredients and tools
- Flour
- Sugar
- Baking Powder
- Salt
- Avocado Oil
- Egg
- Milk
- Vanilla
- Frozen blueberries
- Large and small Mixing Bowls
- Spatula
- Whisk
- Baking pan (9×9 or pie dish)
Step-By-Step
Preheat the oven to 400F
In the large mixing bowl add flour, sugar, baking powder, and salt, quickly combine together, then aff blueberries, gently mix so the blueberries are coated.
In a small bowl whisk together the oil, egg, milk and vanilla, then add the wet ingredients to the flour mixture. Gently mix until the dry ingredients are just moistened. If the batter is over mixed the bars will be tough and blueberries will be crushed.
Pour the batter into a greased baking dish and cover with foil
Bake at 400F for 20 minutes, remove foil and continue baking fro an additional 15-20 minutes, until cooked through.
Allow the bars to cool on a cooling rack, then into bars and enjoy or wrap in parchment.
Store in a cool airtight container for up to 3-4 days.

Blueberry Muffin Bars
Ingredients
- 1 1/2 C Flour
- 2/3 cups sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 c Avocado Oil
- 1 egg
- 1/3 C Milk
- 2 tsp Vanilla
- 1 heaping cup frozen blueberries
Instructions
- Preheat oven to 400F
- Reserve 1/3 cup blueberries.
- Combine all ingredients together. Be careful not to over mix as it will result in tough bars.
- Pour batter into greased 8x8 baking pan and sprinkle remaining blueberries on top.
- Cover with foil and bake for 20 minutes, uncover and for an additional 15-20 minutes.
- Allow to cool and slice.
