  • 2 cups old-fashioned rolled oats
  • 1 cup milk
  • 1/2 cup pure maple syrup
  • 1/3 cup oil
  • 2/3 cup light brown sugar packed
  • 2 large eggs lightly beaten
  • 1 tsp vanilla
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Maple Sugar (optional)

Instructions

  1. Preheat oven to 400F
  2. Combine oats, mlk, maple syrup and oil and allow to the mixture to sit for 10-15 minutes to allow the oats to absorbe much of the moisture.
  3. Add remaining ingredients to the oats mixture and gently mix until blended. Do not over mix, or gluten will develop giving a tough bar.
  4. Once thoroughly combined kpour the batter into a greased 9x13 baking dish and cover with foil.
  5. Bake for 20 minutes covered and an additional 15-20 uncovered, until the batter is cooked through and a toothpick and can be removed clean.
  6. Allow to cool and slice into bars.
