5 Ways to Use Thanksgiving Leftovers

Sharing is caring!

There’s something so special about the days following Thanksgiving — the house still smells like turkey and herbs, the kids are playing with cousins’ toys they somehow “forgot” to send home, and the fridge is bursting with containers of leftovers.

As much as I love a classic turkey sandwich, there’s only so many we can eat before everyone starts eyeing the takeout menu. That’s why I like to get creative with Thanksgiving leftovers — turning them into new, cozy meals that still carry that comforting holiday flavour.

Here are five delicious and practical ways to use up Thanksgiving leftovers that your whole family will love.

1. Turkey Fricot

If you’ve been around here a while, you know my Acadian roots run deep — and there’s no better way to honour that than by using leftover turkey in a classic Acadian fricot.
This simple soup uses shredded turkey, potatoes, onion, and herbs simmered in broth (homemade if you saved your turkey bones!) for the ultimate Maritime comfort food. Serve it with biscuits or homemade bread for a meal that tastes like home.

2. Thanksgiving Shepherd’s Pie

Layer mashed potatoes, leftover stuffing, turkey, and gravy to create a hearty shepherd’s pie. Add a few spoonfuls of peas and carrots (or even leftover roasted veggies) before topping with your mashed potatoes.
Bake until golden and bubbling — this one always gets cheers at our table.

3. Cranberry Turkey Paninis

A sweet and savoury twist on the classic sandwich! Layer slices of turkey, cranberry sauce, and a slice of cheese (brie or Swiss are perfect) between two pieces of sourdough or artisan bread.
Grill in butter until golden and melty.
Perfect for lunch while you decorate for Christmas.

4. Stuffing Waffles

If you’ve never made waffles out of leftover stuffing — you’re missing out!
Mix in a beaten egg or two and press the stuffing into your waffle iron. It crisps up beautifully and makes the best base for poached eggs or turkey and gravy.
It’s a fun (and frugal!) way to reimagine those holiday flavours.

5. Leftover Pie Parfaits

Because even dessert leftovers deserve a little love!
Crumble leftover pie (apple, pumpkin, or pecan) into jars or bowls and layer with whipped cream or vanilla yogurt.
It’s a fun, no-fuss treat for the weekend after Thanksgiving — especially when you’re ready for something quick but still a little special.

Final Thoughts

Thanksgiving leftovers are really just a second chance to enjoy the feast — a reminder that abundance isn’t about excess, but about making the most of what we’ve been given.
From soups to sandwiches and everything in between, these cozy recipes stretch your holiday table a little bit longer and help keep the gratitude going all weekend long.
