I don’t know if it’s the dark mornings or the cold snowy winds but when winter arrives I need a warm breakfast to start my day, a simple smoothie or bowl of granola and yogurt just won’t cut it to start my day. But who has time for a full breakfast when you are trying to get a bunch of kids out the door for school? Not me! That’s why I rely on these easy make ahead breakfasts that I can prep the night before and assemble quickly in the morning before just popping them in the oven while I get ready for the day .
Baked Oatmeal
Oatmeal is a great breakfast the old fashioned way, but when you don’t have time to stand by the stove, to make sure it doesn’t stick to the bottom of the pot this is a great alternative!
Ingredients and Instructions
- 2 cups quick oats
- 4 cups milk or water
- 1/4 cup maple syrup
- 1-2 tablespoons vanilla
- 1/2 tsp salt
- 1-2 cups frozen berries
- Cereal Cream
- Begin by greasing a dutch oven or casserole dish and preheating the oven to 375F
- Add oats, berries and salt and mix gently. just so the berries are through out.
- In a separate bowl add milk, vanilla and maple syrup, and mix until combined. If you are short on time substitute 1-2 cups of the milk for boiling water.
- Pour the wet ingredients over the dry, give a quick stir and bake for 45 minutes-1 hour. Baked covered for the first 20 minutes then remove the lid remaining time.
- Allow to sit for 5 minutes to allow any liquids to absorb.
- Serve in a bowl or mug with cereal cream.
Quiche
Bacon, Omelettes, Pastries.. A good quiche can check all 3 boxes with really very minimal efforts.
Although this recipe is not completely from scratch, the frozen pie crust can be substituted for any beautiful pastry. For this post I am talking about saving time and while still making something warm and filling for your family to start their day. Feel free to adjust the recipe.
Ingredients and Instructions
- 9″ frozen pie crust or home made crust
- 4-5 steps on bacon cooked and chopped
- 6 lage eggs
- 3/4 cup of whole milk or cream
- 3/4 cup of vegetables of your choice (I like tomatoes, mushrooms and broccoli but you do you)
- 1/2 tsp salt
- 1/4 tsp fresh black pepper
- 1 cup grated old cheddar cheese
- preheat oven to 375F
- If using frozen pie crust, leave in pie plate, if making fresh rollout onto the pie plate and pinch edges as desired.
- add bacon and vegetable to the crust.
- in a large bowl mix eggs, milk, seasonings, and 1/2 the cheese.
- pour over bacon and vegetables in the pie crust.
- top with remaining cheese and cover with foil.
- bake for 20 minutes, remove the foil and continue to bake for another 15-20 minutes.
- Allow the quiche to set for 5-10 minutes in order for the quiche to set.
Deluxe Potatoes
This is a family favourite that Michael introduced me to when we setting up the menu for out wedding brunch. We were hosting both out families the morning after the wedding and we wanted lots of options that could be made a couple days ahead of time and tossed into the oven the morning of the brunch. This one hit the spot and had now blessed out Christmas breakfast table every year since.
Ingredients and Instructions
- 2lbs frozen hashbrowns
- 1 can cream of mushroom soup
- 2 cups grated old cheddar cheese
- 1 medium onion diced
- 500ml sour cream
- 1/2 tsp salt
- 1/4 tsp back pepper
- Preheat oven to 400F
- Grease a 9×13 baking pan
- Allow the hash browns to thaw slightly (20-30 minutes)
- Combine the soup, sour cream 1/2 the cheese, salt and pepper in a large bowl. Add in the has browns and combine until fully mixed. Stir gently or the has brown will break up and become mushy.
- Pour into the baking dish and cover with the remaining cheese. Cover with foil.
- Bake 45 minute to an 1 hour or until bubbly. Remove the foil and allow the cheese to become golden.
- Let stand 5-10 minutes
- Serve with eggs and bacon or enjoy alone.
